Job purpose: The main task of this individual is turning fresh ingredients into beautifully plated works of edible art, management the Windmill Kitchen team and all other team members under the Windmill Kitchen.
Utilize farm products to create an exceptional customer experience using food to connect the farm with our guests, focusing on premium in season produce, beef & pork. Create an Elevated Farm to Table Experience.
Scope and Range: Managing the food service at weddings and events, daily food service from the Windmill Kitchen, Crepes & Cream Co., Doghouse, and supplying commissary orders to Mortimer’s Market & Deli, Etc.
This position will also be responsible for the following:
- Direct Windmill Kitchen staff, management and scheduling
- Oversee daily operations
- Food preparation
- Costing on every recipe/menu/item
- Inventory control and ordering
- Menu planning and creating seasonal menus that are weather appropriate (hot vs. cold items), Mortimer grown, seasonal/holiday favorites, realistic prep and execution time, and are fan favorites
- Fulfill Market commissary order
- Catering at weddings, events, Friday Night Barn Dances, etc.
- Mass production of in season produce
- Create recipes and oversee each dish's details
- Follow given recipes flow between the different cook positions as needed
- Participate as a line cook, daily food prep, kitchen tasks, prep cook (chopping ingredients, finishing their prep lists, properly labeling containers in storage, and cleaning countertops), and in other kitchen positions as necessary
- Perform other cooking duties as needed
- Short order meals and quick service without sacrificing the quality of the meal

21.00 – 24.00 per hours
Benefits:
Health insurance reimbursement - 80% of employee’s premium up to $250.00 per month
Retirement account - after 90-day probation period 3% match
PTO (sick or vacation) is earned an hour for every 30 hours worked up to 40 hours per calendar year

Probation period: 90 days after start of employment

A review will take place at the year anniversary of employment and at the end of the probation period
Experience:
· Culinary Arts degree and/or other culinary certification preferred
· Vast knowledge in culinary arts, including any new up and coming food trends
· Food industry experience: 5 years+
· Supervision: 3 year
